The Retailer 3.0 is a major theme update that bring various new features as well as considerable improvement on existing ones.
Before updating:
Since it brings lots of changes, it would be best to test it on a staging site first before going live. If you don't have a staging site yet, it's the best time to put one in place. Many hosting companies offer staging sites as a built-in feature. Reach out to your hosting company and ask if they offer this feature, or use a the WP Staging plugin to create one.
Make sure to update The Retailer Extender plugin as well after updating the theme. Can be done via Appearance > Install Plugins.
A few old page templates were deprecated and shortcodes were deprecated. In case your site was still using one of those features and they seem broken after the update, you can install The Retailer Deprecated plugin to get them back. It can be found under Appearance > Install Plugins.
The Gutenberg/Block Editor:
New block-based theme demo;
Improved Editor Styles;
Improved styles for existing blocks;
New (free) plugin with the theme: Product Blocks for WooCommerce;
The Shop & Product Page Templates
New: horizontal or vertical sidebar option for the shop;
New: Change the number of products per row in the shop;
Improvement: the shop layout was fully recoded to improve overall compatibility with 3rd party plugins;
The My Account / Login page now uses the native WooCommerce template;
Improvement: The layout was recoded to improve the overall compatibility with 3rd party plugin
The Blog
Improvement: The blog layout was recoded and the styles were improved for design consistency across the theme's templates
Header:
New: Mobile Header Layout
New: Mobile Navigation
New: Mobile Search Feature
Improvement: More flexible customization options;
The mini-cart feature was recoded to improve its usability as well as compatibility with 3rd party plugins.
Misc:
New: Page options for the default template that allows users to turn off the page title, the header or the footer for a specific page;
