This site have for a while already loading issues around 5PM CET. Correlate this with recent attacks and heavy caching and filtering and you found the cause.
Google bots are skipping or returning error on high load times or if interrupted while indexing.

Another thing you might not be aware of: your server IPs are out in the wild and easy to reach tho the site is behind cloudflare ns.
