Just wanted to leave this here after two days of troubleshooting:

For anyone getting no notifications sent out by WPForms despite everything else working properly – check your PHP version. WPForms doesn't support PHP 8 yet. You can simply verify by trying to open the «Tools» section of WPForms. If that triggers several PHP errors, you have to switch your PHP version to 7.x it'll work fine again.
