POS will still working but it will not deduct the sale from the stock , you will need to remove the sold item quantity manually
this the only problem in Dolibarr if you deactivate LOT Number you can point the POS to what store to deduct the items from your stock but there is no options to track your expiry of the items .
and there is no loyalty Program or reword points By default in Dolibarr you will need to pay for that .

another good alternative is erpnext basically have everything you need but you need to invest at lest 10$ monthly because its need VPS .

Automatic restore is not available yet there are many ways to backup and restore
Configure super_admin name in env then go to
pos_url//backup to backup and there's a cron for automatic backup
you can use dropbox etc as backup location too, (Check product documentation)
