I currently manage 4 directory listing website on our own self managed VPS, planning to create another one soon.
You should get started with 8GB RAM, 2vCPU (Dedicated) at minimum with atleast 40GB storage & use external object storage for media like images etc.
Directory listing website in combination with woocommerce can quickly max out normal servers, also get a good reputed VPS provider which can provide support in case you need whenever there in unexpected downtime.
Use an uptime monitoring system that can trigger when your website or server goes down.

There are many usual once like AWS, GCP, Linode, Vultr, DigitalOcean.
If on budget you can start with Scaleway, Hetzner, OVH.
I personally prefer them over Contabo because there VPS server are too much oversold.
